VINIFICATION

Handpicked grapes. Only the first press juice is used.

Bottled in the cellars of the Abbey St Michel in GAILLAC.

The bottles are then put on racks for 21 days and turned regularly until the sediments gather in the neck of the bottle. The deposit is then removed with the outflow and the wine is ready for sale.
